What’s a good alternative to Brie for baking in bread, if you don’t like Brie, any other cheeses?

Camembert or one of those in a ceramic dish from supermarkets M&S do nice ones Cornish Cruncher and cider cheese bake is good.

Breakfast bowl - diced bacon, mushrooms, spring onion. Crack an egg on top (i do this in rolls rather than a loaf). Sprinkle with cheddar (probably optional) and bake.

Tomato based veg stew

Vegetable or fish chowder (make it quite thick!)

Basically, if you dont like cheese, make sonething different!

What are you trying to achieve?

Brie and camembert are so similar I can't imagine not liking one but being fine with the other.

By baking in bread do you mean as a replacement in a bacon brie and cranberry sandwich or as a replacement for a baked brie/camembert/fondue type scenario?

Do you mean you want to bake a cheesy loaf, or you want something cheesy to eat with bread?

I assumed OP meant to place in the middle of a ring of bread? Often seen around Christmas time.

TBH I cannot begin to imagine what cheese you would possibly like if you don't like Brie. It's about the most inoffensive cheese you can buy

If brie is too cheesy the only milder cheeses are things like mozzarella, cream cheeses or mild cheddar which are quite bland. All the other melty soft cheeses are stronger than brie.

I love raclette where you just melt it onto boiled potatoes and eat with cornichons and pickled onions. But it's quite strong and not as liquidy as brie.
