I love these threads and they give me great inspiration.

We are having pizzas tonight. I buy the margarita bases and then just adapt for everyone

DCs- pepperoni pizza with a green salad, tomatos, grated carrot, followed by watermelon and ice cream with sprinkles.

DH and I - vegetable pizzas with mushrooms, onions, olives, peppers and an avocado and lettuce salad followed by watermelon and ice cream with sprinkles.

I can't be bothered doing much else, and at least there are nutrients and taste in there.

Autumn Soup- from an old 80s (I think) cookery book. Carrot, peppers, onion, tomato puree, stock, tin of beans, apple, a potato, and dumplings made of bread and sausage.

Tell me about these dumplings made from bread and sausage, please.

We’ll be having boiled ham hock, mashed potatoes with shit loads of butter, and green beans. Probably either ice pops or fruit and yoghurt for dessert.

I've put canellini beans in today, you're supposed to put swede in but I didn't have one!
No you don't blitz it you leave it chunky. Very nice with bread and butter (but I'm on a diet so I'm having oatcakes).

Just off to the beach hut for a fish and chips tea 🥰 still 20 degrees here and low wind, high tide is at 8ish so some kayaking and paddles boarding for the teens.

@JingsMahBucket 6oz sausage meat, 1oz bread, tsp rosemary; squash it all together and make it into 4 balls, cook the usual way with your soup!

@DreamingOfGeneHunt interesting! Those are considered dumplings? I would’ve called them meatballs. What’s the difference in this case? I guess no egg?

@JingsMahBucket yes probably just the no egg. They're nice, but they can't be left in the soup too long or they disintegrate!

Paneer skewers (made up of paneer, tomatoes, mushrooms, onion and pepper) mixed in a homemade tikka sauce in a flatbread with extra salad.

Chicken fried rice - didn't have a lot of chicken so it was mostly vegetables, but it was delish anyway. It was followed by strawberry cheesecake (Lidl, not homemade) which was also very nice.
I'm looking forward to Autumn and the start of the soup season, as soup is one of the few things I actually enjoy cooking. As soon as the first frosts hit, Spiced Parsnip is on the menu!

Sure!

2lb lamb/beef/chicken
2onions diced
6 gloves of garlic (or more!)
6 chillies (or less)
200g butter
thumb sized piece of ginger (cut into small pieces)
1.5 tsp salt
1 tsp chilli powder
0.25 tsp turmeric
3 tbsp tomato puree

Put it all in a heavy pot and simmer slowly till the meat is tender and the butter starts to separate (takes about 1.5-2 hours for beef/lamb).

add in 1 tbsp garam masala
2 tomatoes - quartered
1 onion - sliced

Simmer for another 20 mins or so till the onions and tomato soften.

Stir in another dash of garam masala and add a bag of baby spinach. Cook till it’s wilted.

Add coriander and serve

Enjoy!

I;m trying to use up pantry staples today.

I have couscous, I have a tin of red kidney beans and will make a couscous and kidney bean salad with lemon, dill, parsley, cucumber, tomatos and peppers. Plus a sprinkling of chilli.

I’m doing roast chicken with all the trimmings! Not cooked a roast for months. I’m doing roast potatoes, tenderstem broccoli, green beans, honey roasted carrots and red onions. Sage and onion stuffing, bread sauce and gallons of gravy!
