Please give me your favourite salmon recipes.
Failing that, best vegetarian recipes for four.
I’ve got a mental block .

Salmon Provençal traybake. 1 large red onion, cut into 12 segments, 1 red & 1 yellow pepper cut into 3cm squares, 2 courgettes (or 1 aubergine)cut into 1cm thick slices, 6 peeled garlic cloves. Mix with 1 tbsp olive oil, 1tbsp fresh oregano & 1 teaspoon herbes de Provence in a large baking tray & mix. Roast at 200C for 20 minutes. Add 200g cherry tomatoes on the vine, 120g green beans, 50g black olives & 4 salmon fillets to the tray, spray/drizzle with olive oil, season with salt & black pepper & roast for a further 10-15minutes.

Mix pesto, with some freshly made breadcrumbs (ideally from seeded bread ) and grated Parmesan in a bowl with olive oil. Spread over the top of salmon fillets and bake in oven. They’re delicious.

Flaked salmon with linguine and samphire in a white wine and shallot sauce.

Cook the salmon in the over whilst you’re boiling the linguine. Don’t add salt to the water. Meanwhile make a sauce by sauteeing olive oil, garlic, shallots and add white wine. Reduce. A minute or two before the linguine is cooled, add the samphire, then drain when the pasta is cooked. Add that to the pan that has the sauce in it, add the flaked salmon and some lemon and job done.

We either pan fry or bake salmon fillets brushed with harissa, and serve with couscous mixed with Mediterranean veg and chickpeas that have been roasted in olive oil and whatever herbs and spices I fancy, crumbled feta and lemon juice. A completely made up recipe but everyone in our family likes it, including the teens who usually turn their noses up at fish.

Or, bake in the oven brushed with miso paste and sesame oil, and make a kokoro bowl - jasmine rice, cucumber, radishes, carrot, edamame beans, coriander, half a soft boiled egg, teriyaki sauce on the rice and sriracha mayonnaise - adapted from a Wagamama recipe which is supposed to be with tuna.

I'm low carb at the moment so I do cheesy salmon & veg bake. This is my recipe for 2 people (DH has extra new potatoes and a slice of bread with his)

Parboil cauliflower and broccoli florets, drain.

Steam a piece of salmon per person, remove the skin, chop into chunks.

Add two tablespoons of Philadelphia to a pan, and cover with about a cm of milk. Warm on a gentle heat, stirring, and add 2-3 good handfuls of grated four-cheese mix. Keep stirring until the cheese is melted and you have a thick sauce. Add salt & pepper to taste (I sometimes add chopped herbs too) then stir in the salmon & veg.

Tip it into a suitable dish and finish in the air fryer until the top is browned and crispy.

Salmon in a baking tray with a tin of anchovies poured over and a load of halved cherry tomatoes. Into oven for 15 minutes then chuck some asparagus on top for another 5 minutes. Might need shorter cooking times. Can't remember.
