What’s for dinner?

Morning all,

Sitting here staring at a blank notebook desperately trying to meal plan for this week, however, I’m so sick of trying to come up with something that pleases the majority of the kids and isn’t horrible beige freezer food as I’m sure they would happily live on frozen pizza or nuggets if given the chance (I need veggies at least 5 days a week! 😬).

So, inspiration please! What’s for dinner in your house tonight?

Gnocci in butter sauce with chicken breasts in a garlic and herb gravy. Lovely jubbley!

Tonight was chicken breast Roasted in the oven with garlic, thyme, courgette, red onion, Peppers and cherry toms amd a splash of white wine, served with rice and green beans.

Tomorrow is a mystery....might do a chicken curry in the slow cooker or something with a huge salad and some sort of wrap.

We normally get a shop delivered on Sunday but we stretched it to tomorrow.
I hadn't meal planned for today so I rifled through the cupboards and fridge. Managed to find some of those dolmio pasta stir ins sweet pepper and a smokey bacon one, a fresh pasta bag in the salad draw, some not the best veg and cheese and the last garlic bread in the freezer.

Roast chicken, roast potatoes and parsnips, stuffing, cauliflower cheese, leeks and gravy tonight:

All the leftovers will go into a pie tomorrow, with mashed potato and peas alongside.

Thai red curry (made from a Blue dragon kit), rice and homemade chips out of potatoes!! And homemade ice cream cones for desert (cones, tub vanilla ice cream and flakes)

My kids are all out and DH is working so I’m tucking into a load of cheese and crackers with pickled onions and a couple of wollies. That will do me.

We’ve had roast beef and all the trimmings today which was bloody lovely. Menu for this week is:
-butter chicken, naan, sag aloo
-sausage and fennel pasta
-veg and bean chilli
-bolognaise
-bbq maybe if the weather is nice at the end of the week

Popcorn chicken
Chicken dippers
Corn on the cob
Chips
Coleslaw

And the supermarket southern fried style gravy to dip.

We all eat separately since thr kids and DH are massively food restricted.

I had Thai red curry from a previous batch cook with microwave wild rice. DS had homemade pizza with dough from the freezer. DD had supermarket pain au chocolat. DH had a ready meal.

I am usually the only one eating real meals! Tomorrow is sausage casserole (Delia’s), and I’ll probably have pulled pork, curry and bolognese sometime this week.

Chicken dipped in egg and then covered in paxo stuffing straight out the packet and then baked until crispy. Smothered in gravy with mash and veg. Bloody lovely!

Also corned beef hash. And chicken curry another night.

DS made a fantastic chilli last night and tonight has made the leftovers in to enchiladas with wedges and corn. He's fab, if I say so myself!

Slimming World lentil cottage pie tonight but I made the lentils into curry and put mustard in the mash.

It’s so good. Just a tip - drizzle your baking sheet with oil and then drizzle a bit on the top of the chicken and flip halfway through cooking. It’s so delish!! I hope you enjoy.
