Its for a cauli cheese f9r 1 person, so tiny portion. Can I get away with SR flour in the roux for cheese sauce?

It makes bog all difference. I've had to use it when I've not been to the shops and it turns out exactly the same.

Just for future reference, if you have cornflour boil up a pan of milk, put a couple of dessert spoons of cornflour in a cup and mix with water then add to almost boiling milk stir until thickened then add cheese. Its how i always make my cheese sauce. My DM used to use custard powder the same way because it made the sauce yellow which she saw fitting for cheese sauce 😂 because it didn't have sugar it didn't actually taste like cheesy custard.
