Your best soup recipe please!

Tomorrow I’m going to get the slow cooker out and bung in a load of veg.

I’ve got parsnips, carrots, onions, red lentils.

Hit me with your best tasty recipe using these ingredients!

Mmm LOVE soup weather!

Here’s a recipe we use with these ingredients. Simple but tasty!

2 parsnips, peeled and chopped
2 carrots, peeled and chopped
1 onion, diced
about 200g red lentils, rinsed
1 tbsp olive oil
1 tsp salt (adjust to taste)
Black pepper, to taste
1 tsp curry powder
1.5 litres of vegtable stock

Blend for a smooth soup or leave it chunky if you prefer.

We get 4 bowls out of this recipe.

A pouch of chestnuts add loads of fibre and a lovely savoury flavour to a basic carrot/onion/celery/garlic base.

I made soup using those ingredients a couple of days ago.

I roasted the veg for 30 minutes, then added some cumin and paprika and roasted for another 10 mins.

Put it all into a soup maker with red lentils and vegetable stock, added a spoonful of nutritional yeast and let it cook.

Soup makers are a complete game changer. I always thought they were a gimmick until I got given one. Best soups ever

Ive chucked it all in the slow cooker with garlic, smoked paprika salt & pepper.
I gave my soup maker away recently as I love the wholesomeness of the slow cooker and the aromatic smells as it cooks that fills the house.

It will go on in the morning.
Going to defo try the curry and love the idea of the orange juice too!

Chicken and mushroom:

2 big boxes of chestnut mushrooms, sliced
1 big box of white closed cup mushrooms, minced in a blender
2 packets of big portobello mushrooms, coarsely chopped
a box of Knorr mushroom stock cubes
3 pints of good chicken stock
all the meat from a whole roast chicken, shredded
a packet of cooked Merchant puy lentils
two big bunches of spring onions, finely sliced
a whole bulb of garlic, finely chopped
6 big shallots, finely chopped
a big bunch of parsley, finely chopped
lots of black pepper
butter
flour

Fry the shallots in a big knob of butter until they are lightly coloured, then add all the mushrooms and garlic and stir until they start softening.

Add the chicken stock, the lentils, the chicken, black pepper and the spring onions and simmer for about 15 minutes

make up the mushroom stock cubes with about 3 pints of water (this makes a lot of soup, you need a massive pot) and add with the parsley. Make a flour slurry and use to thicken the soup until all the ingredients are nicely suspended rather than sinking to the bottom. Cook for another 15 minutes, stirring. Check if it needs more salt/pepper, then serve.

Just made spicy parsnip soup this afternoon, all fridge clearance veg! Leftover bag of parsnips, one and a half leeks, 3 wizened carrots, used a block of frozen garlic and ginger we get from Asda, chilli flakes, one dried whole red chilli and some garam masala.
Very good if I say so myself 😋

You need celery too, for flavour. And any/all of swede, celeriac, turnip. Potato in small cubes for thickening? I like some green veg in for the last few minutes - any will do, a leek, some chopped cabbage, cauliflower, broccoli, quartered sprouts.

A couple of good stock cubes are IMO essential. I usually use a chicken and a vegetable.
