Tell me about you best veggie beanie soups please!

I am going to start making some soup. I want it to be veg filled and I also like beans. It doesn't need to be low fat but I want it to be very nutritious as I feel like my lunches in particular have been lacking a bit recently. I tend to use BBC Good Food website but I am so overwhelmed by choice I have been procrastinating. Any favourites you like to make?

Pasta fagoili sounds like it would work and it can be made with literally any leftover veggies

I cut up potatoes and carrots, cold do onion but I don't eat it, then I add stock just to cover and dried chives and parsley, once they soft I add a tin of something like butterbeans or cannellini beans etc. Add more water if need it. Once I bowl it up I add single cream and sometimes more salt. Serve with a grilled cheese.

I regularly make Tuscan Bean Soup from a brilliant little cookbook called Planet Organic (one I use a lot for its great everyday recipes, even though I have 400+ cookery books!). It's really versatile as you can use other veggies depending on what's in the fridge. I keep old Parmesan rinds in the freezer & pop one in the soup as it's cooking. I can't find that particular recipe online, but this is similar.

The key is plenty of rosemary and a hunk of rind from some good Parmigiano-Reggiano tossed in while it simmers. That and plenty of good olive oil for drizzling.

Jamie Oliver has loads of great soup recipes, plenty with beans in. I've just had a bowl of his cannellini bean and pasta soup - delish

This looks great and eating kale always makes me feel virtuous. We make carbonara a fair bit so often have parmesan rinds too.

Another good one is this, by Tamasin Day-Lewis. Chickpeas not beans. But you could swap. And again, you can add more veg if you like. The key is the base trinity of onion, garlic & celery.

That's the one! It is really properly good everyday recipes - unlike the like of Jamie Oliver's "30 minute meals" (if you have an entire TV kitchen crew cleaning up after you ...!!). The author is a very good chef who used to work at Books for Cooks in London. Most of my friends & family now have this book too!

I make a soup that has minestrone vibes

Celery, carrot and onion (or soffrito)
A tin or two of chopped tomatoes
Half a tin of chickpeas
Some Orzo or other small pasta/pearl barley
Herbs and stock

It's lovely, I usually do it chunky in the ninja

Cannelini beans blended in can work well for any creamy type soup

Lentils work well in spicy tomato soup

There is another great soup from the Planet Organic book that I love - & will make you feel even more virtuous! And it's delicious too (coming from a cream & cheese lover!!). It's a green lentil, spinach & cumin one that's Middle Eastern in origin. If you don't buy the book, I can scan both recipes & post them here?
