What are your healthy weeknight meals?

Stuck in a rut at the minute. We have 2 DC age 4 and 2 and I’m keen to expand beyond spaghetti bolognaise every week.

Chicken katsu curry - pretty much just do a big version of the kids one at Wagamama!

Grilled chicken, rice, raw grated carrot + cucumber, raw sweetcorn and katsu sauce (from a jar or the Yutaka packet one is also nice, just a bit more effort) on the side.

We often have salmon or chicken thighs, roasted with mediterranean veg and either couscous or rice. Rub the salmon or chicken with some spices and a drizzle of olive oil.

Stir fries are quick and easy and you can use up bits of veg from the fridge, if you've got a few mushrooms or leeks leftover. I buy the straight to wok noodles that you just chuck in and stir fry for a couple of minutes. Don't bother with shop bought stir fry sauces, just add soy, honey, sesame oil and chilli flakes.

Jacket spuds with various fillings are cheap and nutritious - my favourite filling at the moment is tuna mayo with chopped red jalapeños, it's yum!

My kids really like ramen. I use itsu chilled chicken ramen broth add whatever veg they like, chopped cooked chicken and noodles. It’s in the table in 10 minutes and it feels a lot healthy thank freezer food on nights when we have lots of clubs/activites.
I also use the slow cooker a lot, chicken casserole, beef casserole, fajitas, chilli, chicken and orzo, pasta sauce with shin beef, chicken curry.
