Meal ideas for staying in my Horsebox

I’m off to a 3 night horse show next week and staying in my Horsebox - I’ll have hook up so will take a 2 ring electric hob and will have a plug in cool box. so I’m limited for fresh food by size of the cool box and it’s got to fit a 2 Pinter of milk in there too.

i need ideas for easy meals that are space efficient - lots of room for stuff that doesn’t need to be in the cool box. I’ll take Greek yogurt and honey for breakfast, rice cakes and cottage cheese for lunch but tea is stumping me! I can’t have bread as wheat does weird things to me.

I’ll take protein bars, fruit and lentil crisps for snacks.

I need decent food as it’ll be full on and using a lot of calories and I need it to be tasty so I don’t end up eating chips in the cafe every day.

I thought I’d take some Tilda rice as can heat it in the hob, some fresh soup, maybe some ready made chilli.

Anyone got any ideas? I’m not very creative when it comes to food but I do love eating it.

Pouches of tomato + lentils
tinned fish (mackerel, tuna)
Tinned sweetcorn/mixed beans

UHT milk?

I’d precook something like bolognaise and then heat up some pasta in the evening on the hob to go with it. Chilli with rice is another good idea and you could do another pasta dish with something like carbonara sauce as it’s easy to make at home beforehand, small to store and quick to put together.

Napoli tinned bean salad, baked beans, dry chorizo or salami (the ring one you cut so bring a sharp knife), oatcakes, tinned tuna, couscous or lentil pouches, tinned ratatouille, decent biscuits, nuts.

Noodles
Crackers/rice cakes/cheese straws
Peanut butter
Eggs - scrambled/poach or mix with your rice for a unfried egg rice.

Ooh thank you, those are great ideas. Def tins of tuna and peas / sweetcorn, and I could get one of the dolmio single serve carbonara sauce. If I do that should have room for some pre cooked chicken in the cool box. Mind you, DH is going to get a shock when the tin opener disappears into the wagon 🤣

When we stay in the box we make:
Omelette
Take a pot of chilli to heat up - eat with nachos + bread
Salad + nibbly stuff
1 pan fry up

We bring fresh pasta, cook a joint of meat at home and make a pasta with pre made sauce - meat of choice mixed through. Fresh pasta so quick to prepare. Benefit of having enough tasty home cooked meat for sandwiches for snacks.
Soup travels well and easy to heat up, brown bread and cheese to accompany.
By night 3 we usually succumb to the the garlic cheesy chips temptation!
Enjoy your show, and don’t forget a bottle opener..

Merchant Gourmet food pouches are really good for this kind of thing as they don't need to be refrigerated.

Honestly I'd take a tin of chilli to have with rice and nachos, and possibly a tin of curry to have with rice and poppadoms!! Not very imaginative but would be super filling and you could jazz it up with some salsa for the chilli and mango chutney for the curry.
