Give me your best winter warmer dinners

We are only at the beginning of October and I am already in a rut. Please give me some family pleasing meals for the coming months.

Mine on repeat are:
Coq au vin
Steak, veg, roast potatoes
Slow cooked beef curry
Creamy salmon pasta
Salmon soup
Roast chicken, veg, mash.

I make caulifower cheese alot. With roast potatos, peas, honeyed carrots. It's our standard Boxing day meal with ham for thos ewho eat meat. But I'm making at least once a fortnight really.

We do a slow cooker chicken thing.

Brown skin on chicken legs and put them in the slow cooker
fry chopped bacon and onion, add to slow cooker
add chopped potatoes and carrots
add chicken stock
stir in a bit of mustard, salt and pepper
slow cook for however long

just before serving, stir in a couple of spoonfuls of creme fraiche.

I serve it with some tenderstem broccoli but it’s got potatoes and carrots in the dish so you could just serve it from there with no extras.

I also do a nice sausage and chilli bean casserole, think it’s a hairy bikers recipe. Sausages, bacon, onion, chilli beans, passata, red wine, carrots, paprika, stock. Served with jacket potatoes.

Pork and pineapple curry from the 1990’s dairy book of home cookery. Not a traditional curry by any means, but quick, easy and a lovely meal for a cold evening.

Macaroni cheese with bacon and a tiny bit of truffle. Even better with a breadcrumb topping

Beef or chicken goulash. From the Good food website

Soup. Usually some sort of spicy butternut squash soup made out of frozen squash - can’t be faffed with cutting it up, or a spicy lentil soup.

Delia’s, no stir, bung it in the oven, mushroom risotto.

Beef casserole:
large 2 inch chunks of decent braising steak
chunks of carrot, onion and potato

layer up in a big casserole, sprinkle with a bit of plain flour, 2 crumbled oxo cubes and salt and pepper. Add a bay leaf and some fresh thyme.
cover with boiling water just over the contents of the dish. Cover.

put into a hot 210 degree oven for 30 mins then turn down to 140 and give it a couple of hours. Add a tin of baked beans and / or some sliced mushrooms and some frozen peas. Cook 20 mins or so. Check meat is tender.

serve with crusty bread.

Slow cooker beef stew and dumplings (make 2x as much and the next day have it as a pie minus the dumplings
Salmon and chorizo pasta (creamy sauce with red peppers)

Have a look at Jamie's ' five ingredients 'recipe book . They are really quick and easy and delicious..I do several of those and rhey never fail. ....pasta, noodles, chicken pie, etc. Really nice.

smoked haddock cooked in milk in the oven, then stir spinach into the milk to made a sauce. With ready made mash with some grainy mustard mixed through it. I'll sometimes cook the haddock in foil instead and do some leeks, spring onions and cabbage in butter to have on the side.

Sausage pasta.

Smoked haddock or cod or similar - put in dish in oven with cream or creme fraiche and spinach stirred through and topped with cheesy breadcrumbs. Serve with tender stem brocolli.

Specifically Winterish meals I make are:
Minced beef and vegetable hotpot
Beef goulash
Chicken stew with herby dumplings
Beef stew with semmelknödel
Bangers and mash
Pork in cider, mustard and mushroom cream sauce
Good old shepherds pie
Various pasta bakes - bacon, mushroom and spinach in cheese sauce etc
Moussaka
Lasagne
For sides I do:
Slow roasted red cabbage with apple, red onion, cinnamon and nutmeg, you can batch cook and freeze it in bags as one red cabbage makes a lot!
Roasted polenta cubes
Cauliflower cheese
Vegetable gratin
Potato gratin

Soups:
Roast butternut squash and red pepper soup
Pumpkin and apple soup with toasted walnuts, croutons and blue cheese topping
French onion soup

Dessert:
We're all about the crumble in this house. I preprepare crumble mix and freeze portions for a last minute crumble, and keep tins of pears and jars of gooseberries in the cupboard.
Apple slump
Bread and butter pudding (with brioche if I feel a bit fancy 😂)
Rice pudding
Microwave jam sponge pudding

Lunches:

If not leftovers:
Roasted pumpkin, onions, peppers, courgettes with couscous and a spicy tomato sauce
Jacket potatoes with cheesy beans or tuna and sweetcorn in mayo.

Honestly, the list is endless for autumn and winter food in this country. I find it far harder to think of a variety of evening meals when it's hot and you don't want to have the oven or hob on.
