The stuff of legend

I did something and the result is something I thought only existed in myths and legend.

I made a completely new dish for dinner. And, brace yourselves....

The kids ate it all and said it was the best thing they've ever had! There was no "i don't like this" before they tried it. There was no "can I have something else". I was completely unprepared for this reaction.

I mean it was only creamy garlic chicken pasta but it was something I'd never made from scratch and I rarely do pasta dishes.
What do I do with this new found culinary confidence?

1 clove Chopped/minced garlic fried off in oil
Dice chicken breast and diced pancetta cooked in garlic
Add double cream and cream cheese
Add Italian mixed herbs and oregano
Bring to boil
Add to cooked pasta

Delicious!

I'd hold fire on the new culinary confidence, don't overwhelm them with another new dish, too soon, it could all come crashing down!

Oh don't worry I'll phase it in slowly! In a couple of months I'll try something else. Having good old cottage pie tonight

Apparently it can be done with creme fraiche but it doesn't come out as creamy and light creme fraiche is more likely to curdle

Don’t let it come to the boil. Make sure that the chicken is already fully cooked before adding the crème fraîche and stirring to warm through on a very low light or in the residual heat. It will split if you let it boil.
