Give me your healthy lunch ideas

I hate lunch because I never know what to have. However, I want to start eating better so rather than just having a bit of toast, I’d like to eat some nutritious food for my lunch. I am vegetarian btw so I’d really appreciate some healthy veggie lunch inspiration ☺️

Wholemeal toast with a poached or boiled egg.

Wholemeal toast with baked beans.

Cheese and salad sandwich with wholemeal bread.

Soup.

Mixed bean salad with egg mayonnaise or avocado vinaigrette.

I find soup a good lunch, but I like some carbs too, so have a couple of crackers as well. Houmous on crackers with some veg sticks is also tasty.

I’m just making some carrot, tomato, black bean soup. Usually make a couple of soups a week for lunch portions.

This week for lunch we've had
Roasted vegetable cous cous with protein,
Pasta salad with protein,
Crackers, vegetable sticks, cheese and humour.
Tomatoes, mushrooms and egg on toast,
Leek and potato soup with a roll.
Today will be left over cous cous and pasta salad. Our protein this week was chicken and salmon (but you could add a vegetarian protein).

We eat soup and sourdough almost every day for lunch in the autumn and winter. Some of my favourites that I like to make are tomato and lentil, leek and potato, spinach and nutmeg, cauliflower cheese, cauliflower and turmeric, roasted red pepper. If I put the oven on for a different reason I just put some vegetables in to roast and then make soup with them.

You don’t mention whether you are at home at lunch or if you need something transportable. As many others have suggested soup is my go to. Easy to batch cook, packed with veg and quick to heat and eat. A fritata is also good and lasts a few days. In summer I just do salads but I’m ready for soup season now!

Beetroot, lentil, feta and spring onion salad. With lemon juice and olive oil. That's lovely with green salad, nice bread.

Maybe couscous or bulgar salad with finely chopped herbs, peppers, tomatoes, cucumber and celery?

A good old fashioned cheese toastie with pickle on the side.

Tortilla style omelette with potatoes and onions. You can reheat slice in the microwave.

I have 4 lunches on rotation at work

i take tuna & salad and then buy a jacket potato from the work canteen

soup & bread

bagel thin with boiled egg

vegetable rice & chicken (could use a protein alternative)

Not very adventurous but hubby and I both work from home and rotate a few lunches till we get bored. Spanish tortilla Tesco do a nice one you can microwave. Quiche. Scrambled eggs on toast. Tuna mayo jackets. Tesco finest fresh soup is great if you don't have time to make it. Sweet potato and chilli is lovely. Home bake baguettes and fillings. Toasties. Leftover pasta dinners if children were having a picky evening!

I make my own hummus (roast carrot is my favourite) and often have that with some air fried cauliflower (coated in Moroccan spices) with some feta and pomegranate. I make a tub of hummus that lasts 3-4 days out of only one tin of chickpeas, on other days I might have other roast veg with it.

Pasta with roasted veg is nice cold with some crumbled feta, leftover fried rice with lots of veg in, you can add some beans or chickpeas for protein. Cheese and crackers with apple, celery, grapes & chutney?

Depends if you're at home or not. I'm at home so I use up leftovers for soup quite often.
This week I have lots of leftover keema I made so I have a big spoonful on toast topped with a fried or poached egg and grated cheese.

My go to lunches .....
Soup (homemade or shop bought) with olive bread or a nice roll;
Quiche and salad;
Frittatta and salad;
Wrap, roll or toasted sandwich with salad;
Jacket potato and favourite topping;
Greek salad;
Breadsticks, hummus, crudites

Also check out "hungry healthy happy" on Facebook- she does lovely picky plates perfect for lunch and a lot of it is veggie or easily adapted
