Recipes with beetroot

Was never keen on it but got into eating beetroot burgers. Any good recipes for other beetroot dishes?. Vegetarian, but share anything. I can adapt them and others may like them.

DH reckons he hates beetroot, but he loves beetroot and feta salad with toasted walnuts, fresh dill and a dressing of olive and sesame oil, fresh lemon and orange zest and juice. Or drizzled with tahini dressing (just tahini made thinner with water and lemon juice, a squeeze of honey and 1/2 teaspoon of garlic granules.

Lots of lovely ideas here. I love beetroot, and I actually craved it when pregnant, ate so much of it!

This is a delicious beetroot dip. And, I find it’s ok with dairy free feta, which has a tiny tang of coconut, but is drowned out with all the other flavours in this.

Dairy free most things are vile and I try to avoid them because they're made of weird non-food ingredients! Although I haven't explored the cheese options extensively!

Thank you so much for the suggestions. Made borscht yesterday. It was really good and everyone ate it.

Luckily changed out of a favourite pale dress into an easy to wash black one. Was so glad when the inevitable drop splashed onto me when I used the stick blender.
