Can we have a healthy carb appreciation thread?

See so many people reducing carbs that I feel we need a thread for those of us who love them! I am looking at this as part of an over all healthy diet, not weight loss related.

This week I have enjoyed a few tasty recipes:

Slightly baked baby potatoes with a bit of oil and seasoning, with baked mushrooms, petit pois, rocket and ham, mixed together with fresh basil and a tbs of homemade pesto.
This was so quick to knock up (soften spuds in microwave for 3 mins first), and so tasty!

Cold wholegrain penne pasta with red and yellow pepper, spinach, basil, onion and pine nuts. Can add pesto or other dressing and perhaps a sprinkling of feta cheese to serve.

Wholegrain rice with peppers, mushroom, broccoli, courgettes and feta - add some chilli flakes and garlic, toss together and eat alone or with some sardines.

Mackerel with sticky rice (treat), sesame seeds, brussel sprouts and peas, maybe a few sprigs of tenderstem. Add a dash of ginger or soy sauce.

Minty baby potatoes with feta and mediterranean veggies, baked sliced chicken breast and your preferred dressing.

Wholemeal roll or sourdough toastie with tuna and jarlsberg (or cream cheese if you prefer) with added sliced mushrooms, rocket, cucumber and lemon, pepper.

Tomato/Lentil and veg soup with a sprinkle of cranberry wensleydale, a side pot of tuna with sautéed padron peppers.

I love brown basmati.

Freekeh is bloody delicious.

You cannot beat cheesy, buttery mashed potato imo. But I’m low cholesterol 😭

I try to only have 1/3 carb heavy meal a day, as trying to keep my weight steady. Today I enjoyed a crispy bacon brioche roll, and tomorrow am making macaroni cheese for lunch. Both favourites in our house.

I agree with the lentils - filling and healthy and make me poo five times the following day 😱 I'm sure they gather all the debris that's been stuck in your intestines for the past few months and flush it all out 🫣🤣

I have carbs in most meals.
This morning I had raspberry, almond and coconut overnight oats. I’ve had it most mornings this summer. Love it. As it’s Sunday tomorrow, we’ll have something cooked instead. I think DH will do his signature sweet potato rosti with poached egg.
Lunch was garlic mushrooms on sourdough. When I’m at work, I normally take a Buddha bowl with brown rice or quinoa as the base.

They don't have that effect on me as have been eating them since childhood, along with rice.

Low carb is very, very tough for me as I am veggie. The best I can do is healthy carbs and small portions.

I'm a low carb veggie, it IS hard!!

I do it as it's the only WOE (way of eating) that keeps my BG at a reasonable level (diabetes is a bitch!!)

@StrangeAntics just because my carb intake is as minimal as possible doesn't mean I don't LOVE them! 🥲. If your body can cope with them, knock your socks off.

Carbs for breakfast- toast with something
carbs for lunch - butties (homemade bread in both cases !
Carbs for dinner - noodles with stir fry
plus a crumble for pudding (and some chocolate &fruit)

normal healthy weight, no post menopause weight gain

can’t understand the fear of carbs - cheap and filling

I think the word carb has become a bit twisted really. I love the healthy ones, it's pretty easy put them into a healthy meal.

I am 5.5 and 8 stone at 54 yrs old. Am very active and they give me the energy I need. I don't like overly processed stuff though.

I often wonder why people are still so anti carb in general since obesity is still rising as people keep avoiding carbs. Maybe it's how much we eat rather than what? Just avoid junk and live your life.

Bloody love carbs! I’m a healthy weight and do loads of exercise most days but now prediabetic. GP thinks maybe genes and diabetes UK says low carb isn’t necessarily the answer so I’m carrying on with my usual diet but making sure my veg and protein are increased to help metabolise the carbs.i eat porridge for breakfast most days and red pepper hummus with Crosta and Mollica breadsticks for lunch most days. I’ve started adding vegetable sticks to that to up the nutritional value but I’m not loving it. I’m going to roast some peppers to add onto the hummus. I’m all about the roasted red peppers. Pizza too but make my own and load up with veg and homemade sauce. Crusty bread with homemade soup. I’ve not really tried making baguettes yet but do make my own bread. It’s now 50-100% wholemeal depending on my mood and if I want the kids to eat any. Carbs are good.
