I'm lying in bed on Mumsnet and I really fancy some bubble and squeak and an egg fried both sides..maybe a few mushrooms.
Which of course I'm not going to have...I've got no left over potato and my liver would be dancing ..trying to burn this off.

Cheese on toast. With a few mixed herbs sprinkled on top and tome teeny tiny dollops of ketchup dotted around before grilling

Or cold chipolata sausages that have been cooked in honey and mustard and dipped in sour cream and chive dip / Chipotle mayo

Or Hot sliced pitta breads with houmous dip or whipped feta dip

I can’t sleep and am contemplating getting up for a cup of tea and a bowl of cornflakes. If anyone would like to make me a proper snack though, I’d like a sandwich made with toasted brown bread containing strong cheddar, beetroot, cucumber, spring onions and a side of salt and vinegar crisps, please.

Ok so I’m pregnant so mine is probably weird, and sounds more like a meal than a snack but I would love, Longley farm full fat cottage cheese on its own in one bowl, and then on another plate next to it I would like black olives, mini gherkins, jar pickled beetroot, posh cherry tomatoes, red grapes (and if I wasn’t pregnant I would also like Parma ham and salami Milano on there too!)

I couldn't handle my stomach being in bits if I ate late.. if I woke up hungry I'd have a banana or toast and tea if desperate or ill

I have those delicious sea salt and lime tortilla chips in the cupboard, and I made peanut butter dates coated with 80% dark chocolate with sea salt on top that are sat in the freezer.

I'm trying to ignore both.

Which reminds me, I ran out of potato salad yesterday. During the summer I tend to keep a bowl in the fridge (oil not mayo dressing, mustard, garlic, lemon black pepper etc) for either lunches or just picking at. Will redo tomorrow.

Nice baguette with Brie, tomato and basil. And lots of black pepper. I don’t mind pesto either but it’s fine without.

I de-stone the medjool dates and use a knife to fill the space with peanut butter (I use crunchy, but either is fine). Whack them in the freezer.

Over a simmering pan, I melt the dark chocolate with a little coconut oil and let it cool.

The colder your dates, the more quickly the chocolate will harden and make easier to work with. I just dunk them in, roll about in the chocolate and then place back on some greaseproof paper -lined tupperware. A grind of sea salt on top 👌

I keep them in the freezer and try to eat one a night.

They satisfy my sweet craving with being too crammed with processed sugar (the darker the chocolate, the better for this).

I do similar, but instead of peanut butter I pop a whole almond inside the date then dip in chocolate. I’m definitely copying the sea salt idea next time.
