What's on your meal plan for this week?

Looking for inspiration. Sick of eating the same meals all the time, and I'm a bit rubbish at meal planning. We're trying to eat less meat so I'm hoping for some interesting meat-free ideas in your meal plans!

Mine is not all that inspired and we have had a very busy week.

Monday - Pasta and basic tomato sauce with reheated left over BBQ meat.
Tuesday - Fish fingers and potato waffles
Wednesday - Scrambled egg, fried tomatoe, mushroom and spinach on toast.
Thursday - Tray baked (baby potatoes, red onion, courgette, tomatoe, aubergine, pepper with herbs, balsamic and olive oil. Some kind of marinated chicken breast on top.
Friday - halloumi wrap with sweet chili sauce and salad
Saturday - bbq if dry, if wet baked salmon with roasted tomato and cous, cous.
Sunday - bbq if dry, if wet, toad in the hole.

Mon- pasta with roasted veg and pesto
tues - homemade lamb burgers, salad, garlic bread
Wed- chicken and veg tray bake with harrisa and homemade hummus
Thurs- salmon and noodles
Fri - steak, potato salad, salad
Sat- pizza!
Sun- roast chicken either as a full roast or with couscous

We don't allocate a dinner to a day as we like to see what we are in the mood for. A busy week this week so opted for quickness.

Chicken fajitas
Baguettes with salad and either tuna or egg mayo
Quiche and salad
Chicken and leek pie with new potatoes and green beans
Salmon with new potatoes and corn on the cob
Steak with salad
Hot dogs and fries

I've made a pot of carrot and coriander soup for lunches.

Cheese and onion and potato pie is lovely served with a tin of tomatoes or beans .I like pasta and tuna salad with cucumber and tomatoes and a red onion added in.

Frequent popular ones with us, both from BBC good food, are their Simple mushroom curry and their butternut squash chickpea and coconut curry. If you’ve got the right spices in, they’re pretty straightforward and both lovely.

Mine was crap this week as I too am feeling sick to death of meal planning and the actual cooking!

Monday - sausage, mash, veg, yorkshires and gravy
Tuesday - cheese and onion quiche, spicy rice and salad
Wednesday - tuna jackets with more salad
Today - chicken wraps, roasted veg and corn on the cob
Tomorrow - I’m refusing to cook it’s up to someone else
Saturday - my lovely nan is cooking a curry
Sunday - depends on the weather, either a roast or a bbq
