If I store them in the fridge overnight? I want to take them to work tomorrow but cannot be bothered to make them at 7am whilst juggling the children! Will they be ok?

Yes. Egg wash in the morning before baking. x

Once the raising agent reacts overnight, they wouldn't rise if baked in the morning. You could bake them this evening and they'd be fine in the morning, but you can't make up the mixture fully tonight and bake them in the morning.

Why wouldn’t you bake them this evening? They’ll still be lovely tomorrow

I always think they taste better if freshly baked. You are persuading me to just bake tonight though, once covered in cream and jam they’ll be ok?🤞

Yep cook them tonight.

Less stress.
Plus they will be cool for transport so not soggy bits

I would do them tonight - they will be fine. If you really want to do them tomorrow I often do them to the crumb stage and put in the fridge overnight and then add the liquid and bake the next day.

Thank you-I’ve just baked roughly 50, they smell great and are cooling. Will box up and take in-thanks for the tips!
