Gluten / Wheat Free Hot weather ideas?

Anyone got any good gluten / wheat free meal ideas in the hot weather?

Ideally vegetarian if possible. All I want is couscous (can’t have) and bruschetta (haven’t found an amazing GF bread).

I roasted some veggies let them cool, added lettuce, chicken, hummus and salad dressing and it was perfect

You can add small boiled or roasted potatoes, eggs, green beans, olives, avocado

The schar gf panini rolls (Tesco) are lovely and would make great gf bruschetta. I roast a big tray of veg and then use it to make frittata for lunch or add them to salads.

Ds's gf is coeliac and told us yesterday she's found gluten free couscous in a big Sainsburys. Game changer, in her words.
Otherwise, sooo many salads with tiny new potatoes, quinoa, lentils or rice as the carb.
Favourite salad at the moment - green lentils, sliced griddled courgette, pomegranate seeds, red onion, broad beans and griddled halloumi marinated in rose and pomegranate harissa (from Waitrose) with a red wine vinegar and olive oil dressing. Bloody lovely!

We made jollof rice earlier. We’ll have it cold as a ‘rice salad’ (there are a lot of vegetables in it eg red peppers, tomatoes, herbs, chillies, ginger, carrots, as well as the spices). Can be eaten with cold meat, or fish, or salad vegetables & breads.

We make a batch of jollof so it does us for days. It keeps well in the fridge for up to five days.

Gluten free orzo is pretty good… and there are so many delicious options for cold and summery salads.

I cooked GF orzo with paprika Quorn pieces last night. It was so good and my Granddaughter aged 5 really enjoyed it. I cooked the orzo with bouillon stock which is vegan and GF .

I love Jollof Rice, made it last night, dh had in stuffed peppers with feta on the top. I just had bowls of it!
