What’s your favourite? (Mumsnet ‘Massive Salad’ aside of course. Does anyone know what actually constitutes as a MN MS?)

I have just had an amazing Caesar salad, homemade so I can add as much croutons, garlic, anchovies as I want. I like it quite punchy!
Also love a Salad Niçoise.
And Potato Salad.

I love salads.

As a side to spicy food, I am a recent convert to sliced radish, thin cucumber strips done with a potato peeler with an olive oil, sugar and lime juice dressing. Very refreshing.

I really love a ‘warm salad’ - roasted ciabatta, red onions, beetroot, sweet potato,
then cold feta/or warm goats cheese, spinach and leaves.

I’ve just finished a lovely one of Nigella’s.

Very simple: roast courgette (green and yellow if possible) cut into batons with evoo, s and p. Blanch and pod broad beans, steamed and blanched green (French) beans. Let courgette cool in oven pan but not completely, mix, including the oil, with the other vegetables, add freshly squeezed lemon, basil, parsley and any extra seasoning or evoo required to taste. Serve at room temperature. We’ve just had it with finely sliced rare steak and jacket potatoes for the rest of the family,

I also really like tuna, white bean and chopped hard boiled egg salad with parsley, but, IMO, you need great ingredients - preferably the tuna in a jar with evoo, and the beans from the jars, not the aldi tins. I ate this in Lisbon many years ago and was obsessed with it for a while!

Ooh love a salad! Some of my favourites include:

  • A standard caprese, heavy on the balsamic
  • Chickpea couscous/quinoa salad with sultanas, chopped dates, nuts, greens, etc for something more filling
  • Hot honey halloumi, pomegranate, spinach, cucumber etc
  • Mango, red pepper, red onion, lime, chilli/ jalapeno, fresh mint, maybe avocado/ leaves

I love a bit of fruit in my salads (pomegranate, grapes, watermelon etc) but DH can't stand it unfortunately

Caeser salad but done with smoked chicken breasts (bought from the smokery)

Dressing... mayo, sourcream, and mashed up anchovies, then croutons done in the airfryer. Little gem lettuce. Voila!

One of my favourites is a Josceline Dimbleby recipe from one of the Sainsbury recipe books. I’ve posted it before, so will copy it now:

Green Pea Salad with Fresh Ginger and Olives

12oz/350g peas (I use frozen petit pois, which I prefer generally)
2oz/50g stuffed green olives, roughly chopped I use the ones stuffed with pimento
2oz/50g candied peel
1 clove garlic, finely chopped
1-inch/2.5cm fresh root ginger, peeled and finely chopped
2 tbsps/2 x 15ml spoons lemon juice
7 tbsps/7 x 15ml spoons sunflower oil
1 heaped tsp/2 x 5m spoons paprika
sprinkling of salt
a large bunch fresh parsley or mint, finely chopped I generally don't bother with either of these - I'm not keen on parsley and (personally) think that mint would be too strong in this salad

Method:

  • put all the ingredients (except the fresh herbs) into a pan.
  • put over a medium heat, cover the pan and cook gently, stirring now and then, for 10 minutes
  • remove from the heat and stir in the herbs, if using
  • allow to become cold and then spoon into a bowl

It sounds like a bizarre combination of ingredients, but trust me - it really works!

My fave is baby spinach, chopped pomodoro cherry tomatoes, cucumber, avo and olives with chick peas , tuna and crumbled feta. Honey mustard dressing. Lush.

Thanks everyone, can’t wait to give some of these a go!

Favourite warm salad is new potatoes, beetroot and smoked mackerel and a dressing of some sort, something mustardy.

Love the watermelon, mint and feta one too. That’s a summer regular.
And the might classic Greek salad. Yum.

That sounds gorgeous. I can't visualise the quantities - is that a single serving?

Edit - scrap that. I've just realised the first ingredients is 350g of peas. That would be a famous mumsnet massive salad if it was a single portion 😂

A simple one made from little gem lettuce, cucumber cubes, baby plum tomatoes and cooked petit pois in Caesar dressing. Leave it all in a bowl for a couple of hours at room temperature for it to give everyone food poisoning Mumsnet stylee the flavours to develop. Just lovely. 😋

Please note - that's pumpkin seeds. Not dried green lentils, as I liberally added, when I wasn't watching which container I'd taken out of the cupboard.

Reminds me of when DS1 complained that the popcorn machine was taking ages. Turns out that yellow split peas don’t pop… 😁

I was recently in Switzerland and had an amazing sausage salad. But unfortunately I can't see myself being able to replicate it as it was a particular type of sausage that we just don't have here 😕plus we're not allowed to bring pork home so I couldn't even buy some!
