Inspire me, easy pescatarian/vegetarian food during kitchen installation

About to have a new kitchen. Sounds like it'll be out of operation for two weeks/might tip over.

We have use of kettle, sandwich toaster, microwave and a single hotplate.

I'm thinking lunch will mainly be a sandwich, toasted sandwich, omelette and salad. DH won't want, but I sometimes have salad or peanut butter on toast.

I've frozen a veggie curry, veggie spag bol and veggie chilli. Am thinking we'll cheat with a couple of ready meals and add salad/boiled veg, maybe eat out a couple of times/takeaway. Maybe do a stir fry. I can make up some couscous which can be served with brought ready cooked salmon or quiche and salad.

Can anyone give me any other inspiration please.

Could you realistically buy or even borrow an air fryer? It would up your choices.

Jacket potatoes in the microwave, salad and a protein source (tinned tuna maybe?).
Buy a bag of ready chopped stir fry veg, throw in some prawns or tofu and microwave rice.
Risotto
A hearty lentil soup and crusty bread.
