Sides for steak

I’ve got a friend coming out of hospital and will finally be well enough to eat full proper meals, and they’re desperate for a steak night with all the friends. They won’t be up for going to a restaurant so I’m cooking. I need some help as they very much feel that “the sides make the meal” so give me some amazing sides which go with steak.
I think I’ve got potatoes covered as I’m making potato dauphinois and Camembert mashed potatoes.
Also doing a garlic herb mushroom dish.
But I need some veggie sides, maybe another meat or seafood sides, I don’t know. Lettuce wedges of course!

So hit me with your suggestions and any fool proof recipes.

Add a wee dollop of garlic butter on top when you serve up! I use half a Camembert for 500g of potato when making it for the kids, more Camembert if no kids to complain!

I love French food but had never heard of mashed spuds and Camembert. One lives and learns.

There’s a gorgeous Irish Camembert called Cooleeney so I’m off to buy it and make those mashed potatoes @Thebloodynine
DH is a divil for butter on his spuds - even roasties 🙄 I despair but mashed Camembert sounds fabulous.

i always use fillet steak and do sautè mushrooms and onions with either chips or the Avoca recipe for small waxy potatoes roasted in the oven with garlic, balsamic vinegar and a few rosemary sprigs added towards the end.

I don’t know Miller and Carter either, maybe there isn’t one round here. Griddled veg are usually nice though. If your friends are happy with the potato options then that’s fine, just wouldn’t be my preference.

lettuce wedges with different toppings
Green salad
roasted bone marrow boats
crusty bread
creamed spinach
steamed asparagus, sprouts and broccoli
garlic mushrooms
chilli butter prawns
roasted butternut squash
parmesan tomatoes
potato dishes
peppercorn sauce, beef dripping gravy and blue cheese sauce

There are 9 guests plus me so for 10 of us, I think that’s loads of choice and not everyone will have everything.

My favourites are chunky chips, onion rings, fried mushrooms and grilled tomato. Peppercorn sauce on top. Yum.

My favourite side is asparagus with breadcrumbs and brie.

Blanch the asparagus - bring to the boil and then simmer for two minutes.

Layer the spears in a casserole dish.

Cover with slices of brie.

Mix breadcrumbs with butter and spread over the top of the dish.

Cook in the oven for about 10 - 15 minutes.

But might be a bit cheesy if you're already doing creamy potato dauphinois.

For me, steak should be served very simply, either with fried onions and chips or with a mixed salad. No macaroni cheese, nothing creamy or cheesy at all. The steak should be the main event. Your friend would think I was very boring!

Chips have their place, but cooking them for 9 in a domestic kitchen is always going to lead to disappointment. You can’t have oven chips, they need to be proper deep fried ones and to deep fry for 9 you need an industrial sized deep fat fryer. Even if you did have oven chips, doing them for 9 people well would overwhelm a domestic oven I suspect.

That’s also true!!

Hopefully the wiggle room of letting steak rest before serving helps the OP. There are lots of side dishes to prepare as well. Hopefully the family is roped into that :)

I’ve been asked to host because I make amazing steak. I’ll manage it for 10 without much fuss, as long as all the sides can be prepped ahead of time and bunged in the oven in the right order.

I’d be disappointed if there weren’t skinny fries with steak. Plus onion rings a peppercorn sauce and salad will do me.

How are you attacking it? 4 pans for different degrees of wellness or taking advantage of the rest time or something else? I think I’d be tempted to crack open the BBQ.

Oh my god this would be my death row meal for sure 🤣🤣 I was going to offer up a couple of suggestions but what you’ve listed along with the potatoes and steak is waaaaay better. Seriously sounds amazing, hope you all have a lovely evening!
