What to do with rhubarb?

We’ve got a glut of rhubarb already and im never really sure what to do with it other than compote and custard.

Any ideas?

Rhubarb and custard blondie. I miss out the white chocolate chips, it's sweet enough without them.

Otherwise I cook rhubarb in the oven with a little sugar and water. Once cool I have with kefir or Greek yoghurt with my lunch.

Add custard powder to blondie mix for an extra fudgy texture. Pair with rhubarb for a classic flavour combination, or try swirling in some jam or compote

I make jams and spicy chutneys.
Also flavoured vodka.
I made this tart once, which looked pretty cool.

Google Mr B's Rhubarb Chutney, it is seriously delicious. I made rhubarb vodka last year, didn't add much sugar, it was really nice just with water and ice!

If you really have too much/it's going to waste, your local freegle may find people who would like some.

My mum used to make something called rhubarb ring pie, which was my favourite. Sadly I don't have the recipe to hand, but it involved rhubarb cut into chunks on a plate and sprinkled/drizzled with sugar, Syrup, sultanas, ginger, cinnamon & mixed spice & possibly lemon juice - then topped with scones - so basically a type of cobbler. Served with custard on vanilla ice cream - absolutely delicious- I must get the proper recipe.

Cook it in a small amount of sugar and reduce it down. Freeze in small portions to add to plain puddings or ice cream.

I do this but have it with porridge for breakfast, in fact I had it this morning - delicious!

Crumble every time

Orange juice in with the rhubarb -sultanas brown sugar and then crumble on top with orange zest 😋
