A raw broccoli salad with dried cranberries and smoked almonds. I could eat it every day.

Simple Greek salad, red onion, tomato cut into wedges, cucumber, olives, feta, olive oil and oregano.
Or my three year olds favourite caprese salad tomato, mozzarella and basil with balsamic vinegar/ glaze.
Im a big fan of a warm panzanella salad, I use a recipe from hello fresh that uses roasted butternut squash, the recipe is in the website for free if you are interested.

Halloumi is great in salads with yoghurt and mint! Add some roasted peppers or some mango.

Butternut squash, rocket leaves, pomegranate seeds, sunflower seeds and crumbled feta. With a red wine vinaigrette. This is a great one for extending salad season into the autumn.

Jamie Oliver’s Frenchie Salad that I make with leftover roast chicken. It has green beans, Puy lentils, soft boiled eggs, and a mustardy tarragon dressing. I’d be delighted if served something like this in a restaurant.

I also love to roast sweet potato then mix with cherry tomatoes, feta and coriander all with a chilli vinaigrette

Fillet of beef salad, from one of the Sainsbury’s Cookbooks. The one written by Caroline Waldegrave, called The Low-fat Gourmet.

Basically a flash-fried piece of fillet of beef, sliced, served with lightly boiled cauliflower and broccoli, green beans, and cherry tomatoes. With a vinaigrette made with horseradish, garlic and chives. Absolutely delicious.

Grilled halloumi, grated carrots, chop up avocado, tomatoes, beetroot and cucumber, rocket, seeds, EVOO and lime juice -yum!

I eat the same salad pretty much all of the time and I'm still not bored of it.

Bistro Salad (chopped up with knife)
Finely chopped cucumber
Finely chopped red onion
Grated red cabbage
Pomegranate Seeds
Crumbled Feta Cheese

I'll either top with garlic mayo or balsamic glaze. I also sometimes add dried cranberries / chopped walnuts for a bit of crunch.

Waldorf salad is my favourite.
Cheddar cubes, walnuts, celery, raisins in a good mayo. On a bed of crispy lettuce with cucumber and cherry tomatoes.

Waitrose have got a kind of cheats caesar salad on their website at the mo which I did last week, it was delicious.

pot of garlic potato salad
pack of cooked chicken breasts
romaine lettuce
chorizo crumbs

I added Parmesan as well

Spicy roasted cauliflower and chickpea. Roast chickpeas and cauliflower with garlic, cumin, ground coriander, turmeric and chilli flakes. Serve on bed of green leaves with celery and red onion. Dress with mint and yoghurt dressing.

Shredded iceberg and carrots, sweet corn, chopped peppers, pickled red onion, chopped coriander, top with chicken.

Pea shoots, spinach, celery, red onion, apple, cucumber. Drizzle balsamic vinegar. Top with crumbled blue cheese and mixed seeds.

Honeydew melon, balsamic and parmesan on a regular salad, served with olives and capers. It sounds odd but it works.
