Healthy meal plan for the family ideas ?

Hi All, I need to do my online shop soon and I’m stuck on meal ideas. The reason I’m asking is because I need inspiration and I’m feeling absolutely stuck for what to cook every night. I have two young children who will mostly eat anything but my youngest is a bit fussy.
What are your go to meal ideas when you want to eat healthier but also need to be on a smaller budget
I hate the food shop 😭

Try simply cook? They have the flavourings in boxes that you can buy at Tesco if you don’t want to order them online (you get the recipe cards in a pack of 4 if you order online for about £10). There’s quite a few that my DC’s like. We’ve also done hello fresh and Gousto before so if I get stuck I just get the recipe cards out for them to choose from then buy the ingredients. Mine are a bit older though so they’ll help with the cooking.

This week we have
Butternut squash and sage pasta
Chicken madras
Vegetable pad Thai
Cod with herby Parmesan crumb, wedges, peas and sweetcorn
Stilton stuffed field mushrooms, tenderstem broccoli and green beans
Spiced cauliflower and roasted veg with cous cous.
Chilli and lime prawn tacos, Mexican slaw, corn on the cob,

We’re having a chicken roasted tomorrow with either jackets and salad or as a roast dinner.
what’s left will be either risotto or ramen which we’ll have with (shop bought)Thai fishcakes / prawn crackers and a Thai salad.

rest of the week I’ve got a pizza or quiche with salad / jackets.
A Curry.
Carbonara or bolognaise?
And I’ve got some chicken I’ll marinade in yoghurt with garlic / cumin and lamb chops (same marinade) halloumi with hummus / guacamole/ salsa pitta / salad -
another night we’ll have nachos (put in oven with grated cheese and jalapeños on) with the left over dips and a portion of chilli from the freezer.
So not mega expensive or super unhealthy.

My eldest is quite fussy, but will eat:

  • chicken curry (I very roughly follow swasthis butter chicken recipe but use yoghurt)
  • make your own fajitas
  • creamy tomato pasta (great because I can blend veg into the sauce)
  • lightly dusted fish with potatoes and veg

Otherwise for cheaper dinners we have turkey or veg mince bolognaise, daal, chicken/veg fried rice, veg mince chilli, mushroom stroganoff, oven pizza and salad.
