What are your quick but satisfying, reasonably healthy lunches

At home. I like something hot, or maybe it's that it's that someilthjng "nice" but cold, like a proper salad or interesting sandwich, is actually more trouble, but seem to rotate between beans on toast and egg on toast. What else?

I used to batch cook soup and take that. Now I have a child and no time, I have a tin of tuna and two spoons of coleslaw each day. Atrocious I know! But I rationalise it's protein and veg so it's ok!

Today I had a protein yoghurt and some mixed berries I have this most days.
Or I might have a couple of scrambled eggs in the microwave I don't have bread though.
Or perhaps some porridge with berries and a bit of honey.
I have no time or desire to cook big lunches.

Sautéed mushrooms and melted cheese on top is god-tier food. Top with Tabasco and sprinkle of spring onions for bonus points.

Melted cheese also goes under the mushrooms!

I lightly saute the mushrooms and lightly toast the bread. Butter the bread, add a layer of cheese, grill, add mushrooms and more cheese, then grill some more.

Omelette with mixed peppers and mushrooms. Maybe cheese and bacon too!
Tuna Niçoise salad.
Smoked peppered mackerel (bought ready prepared) with salad.
Warmed mix veg quiche.

They are my go to's as well.

Cheese and ham panini.
Tomato soup and wholemeal roll.
Medium jacket potatoe with 1/3 tin of baked beans.
Bacon sandwich with wholemeal bread and no butter or spread.

Following - I’m shocking at eating lunch. I’m in the office two days a week, and usually end up eating some crap which isn’t great.

it’s frustrating as I like healthy food. I like salads etc, I just get so flummoxed over what to make

Pizza toast….basically whatever suitable veg in the fridge on toast with cheese on top.
tuna or sardines on toast with salad
I’ll often make a coleslaw with a lime and chilli or vinaigrette dressing and that lasts a few days.

tex mex / Moroccan / herby chicken / falafels / smoked salmon
salad leaves / cucumber / chopped toms
hummus / soured cream / cream cheese / guacamole

This week I’m eating aubergine and cherry tomato dhal.

I often fry a batch of mushrooms, peppers and onions to keep in the fridge so that I can make omelettes quickly.

There’s lots of tasty ideas on this thread.

I like to make a homemade version of the ‘Buddha bowl’ a local cafe charges a tenner for.

So, a pasta bowl with whatever nice bits I can find in the fridge. Usually some chopped avocado, a bit of feta, a dollop of hummus, a few olives, some cherry tomatoes, some salad leaves, a handful of almonds, some pumpkin seeds, some chopped chargrilled peppers from a jar. I drizzle the whole lot with a bit of evoo, and maybe a bit of balsamic.

I really enjoy it and it fills me up.
