What to cook chicken thighs with bone in

Defrosted over night so need cooking. It’s just me but I have eight! One will go to the cat. I’ve been off my food but I’ve woke up from my nap starving. So no slow cooker recipes. I’ve been housebound so can’t buy anything to add.

i have chicken thighs and I want to keep the bone in. Mushrooms and lots of frozen veg. In the cupboard I have sweetcorn, tin tomatoes and every kind of tinned bean.

all the herbs and spices and several bottles of wine.

what can I cook that will stop me feeling sorry for myself. I have cream also. And a crusty semi baked baguette

Do you have an airfryer? I often toss thighs in olive oil, salt, pepper, herbs, and chili flakes then airfry for about 25 mins.

It’s like a healthier version of KFC, and also nice cold the following day if you have leftovers.

Tray bake/one pot type thing - have you got any orzo pasta? Roast the chicken thighs for 20 mins, chuck any old veg, orzo pasta and a pint of stock in and back in the oven for 20 mins.
Warm and lovely on a day like today and loads of left overs for easy meals in the week. Have the bread with it for some proper winter comfort food

Do they have skin on? If so, I would just cook them in olive oil with salt and pepper, bit of garlic if you have it, to crisp up the skin. I’d make a mushroom and thyme or tarragon cream sauce to have with them, but separate. I like it with rice, but you could just do baguette.Frozen veg on the side.

This looks good and would go well with crispy baguette. Should be ready enough to swap in/out ingredients depending what you have.

Chop celery, carrots, onion, pan fry, add chicken stock, garlic, paprika, chilli if you fancy it and chicken thighs, skins removed, simmer for 30 mins then add some orzo and simmer for any 15 mins, it's lovely.
