Need inspiration. We had pasta last night so maybe not pasta.

I just chuck some sausages in a roasting tin/one of those big le creuset-esque earthenware dishes, with chopped sweet potato (don't peel), carrots, peppers, beetroot (the vacuum packed stuff with no vinegar) mushrooms, all chopped into biggish chunks, peeled and chopped red onion (small wedges) , with some garlic cloves crushed, salt and pepper, olive oil, smoked paprika, chilli flakes (can leave these out) and some cumin seeds, mix it all up so it's coated and bung it in the oven, 45 mins give it a mix/turn half way through. I then just put the dish on the table for people to help themselves with a bowl of green veg. DH likes crusty bread with it to mop up juices.
It takes 5/10 minutes to prep, oven does the work

ETA the same method works using new potatoes, parsnips, carrots, mushrooms, onion, garlic, sage and thyme, served with Yorkshires!

@OnlyYellowRoses is it an Aldi packet powder you're using for shawarma? I've not seen them there lately - or the Greek (Kyros/souvlaki range either 😥

I don't know; my husband is cooking, so there'll probably be a baked potato somewhere. I don't care what it is, everything tastes better when someone else has cooked it.

Last night was veggie fajitas (filling made with chickpeas, peppers and onions).

Stir-fry veg, noodles and baked salmon. DH makes an amazing sauce using garlic, ginger, soy sauce, peanut butter, sweet chilli and god knows what else!

I do similar with a whole chicken. I must try it with sausages.

I chop potato, sweet potato, butternut squash, carrott and red onion into big chunks. Add chopped garlic.

Put a whole chicken on top which I've stuffed with a lemon. Add mixed herbs, salt, pepper.

Add enough chicken stock that it goes half way up the veg.

Roast until its done. It's a truly one pan meal.

Some lovely ideas here.

We are just having pasta with mushrooms, pesto and cheese on the top. Simple but tasty. And some garlic bread.

This bistro salmon thing from Asda. DH will have chips will his, I will have a bag of rice and an avocado with it. The kids had tea at grandparents.
