Cheaper Fancy hotels -- can be in middle of nowhere

My kids really like staying in a nice-ish hotel -- nice breakfast, indoor pool if possible.

What are the cheaper fancier hotels -- ie perhaps cheaper because they are out of the way or in a less desirable city? We would really be traveling for the hotel experience, not the actual place if that makes sense.

I'll leave open what it means to be "cheaper" or "fancier" . . .

UK would be great but open to ones abroad as well!

Thanks!

Have a search on Booking.com. If you put in say England, pool, breakfast and your budget you should find something.

The Rock Hotel and the Eliott Hotel in Gibraltar are lovely, if you're open to going overseas, and depending on when you go they are reasonably priced. The Sunborn is also lovely (hotel on a yacht!) but is more expensive.

Dunkeld House Hotel in Scotland is also lovely and price again varies depending on when you go.

Have a look at the Orton Hall hotel in Peterborough. That can be cheap. It’s on the outskirts of the city and close to Ferry Meadows country park which is great for kids.
