Feel a bit sick now.

Is anyone else trying to clear out the remaining Christmas cheese? I still have a manchego and some kind of Italian sheep cheese that needs to be eaten in the next few days.

Well I just put about 5 different cheeses into my cheese sauce for our cauliflower and broccoli cheese. The rest will probably go into a Broccoli , Stilton and fu*k load of cheese soup.

You can freeze the manchego, it'll be fine. I'd cut it up into pieces first (so you don't have to use all at once).

I was given masses of cheese over Christmas but thankfully most of it is cased in wax, so I'll just use it gradually in cooking over the next six months.

I have a teenage boy to eat up the little that is wrapped in plastic.

Oh you can freeze manchego? Had no idea.

Soup is a good shout, I think I've got a blue that could act as Stilton.

We’ve just driven past Camembert in France! I have some in the roof box of my car. Never managed a whole one though. I’m impressed.

Most dates on cheese don't need to be heeded at all. Use it for weekend lunches over the next fortnight. If it's not too pongy like decent brie or Camembert then rake it to work for lunch

(We freeze cheese generally. This year I made a massive batch of everything white sauce and froze it in a giant ice cube tray)

I love a blue cheese sauce to wipe the smug grin off steamed veg, especially broccoli. It’s so delicious and clearly unhealthy. It’s ace.

Cheese is for life and not just for Christmas! Grin I just went to M&S and got a couple of bargain cheeses that were reduced to clear. I shall eat them at my leisure!

What's the rush? Cheese can be eaten weeks if not months past the date depending on the robustness of the packaging. Camembert type cheese usually isn't even ripe by the date on the packet. I've still got a waxed cheese from last Christmas that will still probably be OK to eat.

I've bought loads of cheese reduced after Christmas and it will be eaten over the coming weeks/months.

Cheese can be frozen but equally In september I ate some manchego thta had a use by date of March 24 because Id bought that last christmas. It was fine, it hadnt been opened until then but kept in the fridge

I wouldnt give anything like that to someone else but Im fine with it. It was 18 month matured after all, another 12 is fine.

Oh I love camembert but I'm lactose intolerant so I have to be a bit careful with soft cheeses. I quite fancy a bit now that you've put it in my head. Grin

I’m currently living off air fryer cheese toasties. Yesterday’s was a combination of truffle brie, red Cheshire and Cornish Yarg, with a generous dollop of fig jam. It was spectacular.

Do some people only really eat cheese at Christmas? I consider it an essential part of life and often have a camembert for a Saturday night dinner.

I had a baked Camembert with onion glaze with crusty bread on NYE and it was delicious.
