Baking/pudding enthusiasts: what do you like baking/making for your family at the weekend?
I've been doing apple crumble and custard which is lovely but I fancy a change. I stopped baking as I was starting to get really fat but shop bought things aren't cutting it.

In the good food magazine there’s a slow cooker ginger pudding ‘magic’ cake that is tremendous - just waiting to be discharged from hospital and already told DH I need

it’s come at a good time for me though as I have enjoyed baking in The past but haven’t done it much apart from scones.
i have also thought it’s a lot of pressure to eat everything you bake and that’s not great for the weight.

i have been very much thinking though in the last couple of months that all the stuff you buy in the shops is just so expensive and crappy quality now that it would probably be better quarantine and more economical and actually be healthier for me to bake something that can last well or can be frozen or is easy to just make a small amount of but then it’s there and all sweets biscuits crisps etc can just not be bought.

I’m loving irishmammycooks on IG, and working my way through some of hers. Did the mincemeat traybake last week, and was aiming for the raspberry and custard one this weekend - but I have festering bananas to use up, so will be a Nigella banana bread instead (or as well and send a load to work with husband, depending on how the fancy takes me).

When I do bake I make muffins as they are all in one & quick and sometimes gingerbread men but then I can't stop eating them as they 25 times yummuer than shop bought ones.

A good gingerbread person is an incredible thing

Vegan cheese scones.
Peanut butter and chocolate banana bread.
Bread and butter pudding.
Vegan pizza.
We are having homemade pizza made with stringy cheese tonight.

@Bananaram that cake looks delicious. May give it a go.

This week I made a plum crumble with flapjack topping (Waitrose website). It was okay but we all preferred a traditional crumble.

Dd made some pao de queijo cheese balls today (packet mix from Brazil) and I need to step away from them because they are quite moreish.

Think I’m going to make a first batch of mince pies tomorrow. Dh came back with shop bought ones this week. He knows that’s not really allowed because dd and I prefer to make themGrin

Not quite cake but making oatcakes tomorrow with pinhead oatmeal and probably a rice cake. Ive been making jam today with homegrown rasps and setting away blackberry and apple jelly to boil up tomorrow. I like raspberry jam on cheese scaones so will knock up some tomorrow. Yum!

I made a Ginger loaf cake this afternoon, it's gorgeous! It's a James Martin recipe, would be nice as a pudding with custard too.
If im bored of crumbles I make Mary Berry's apple frangipane tart. So easy and uses digestive biscuits as the base.
Oh and good old pineapple upside down cake is always a winner.
