So since I'm not able to speak to anyone irl at present, please help me with tonight's dinner?

I roasted some veg on Monday (fresh broccoli, potatoes, onions, as well as some frozen butternut squash chunks).

Can I still eat it today??

Chop it up, bang it into a frying pan and heat it up and crack an egg over it, mix it up as the egg cooks, sprinkle on some cheese and plate up.

Should be good. Up to you if you reheat it or not. I like eating cold cooked veg like that, perhaps with some couscous or rice, but not everyone enjoys cold veg. It depends whether or not you want it hot. It should be OK, whether you heat it or not.

Yes if its been in the fridge. I often batch cook roast veg and eat through the week or freeze and heat from frozen. It takes a few minutes on a roasting tray to be ready, means I eat a variety of veg that isn't just frozen peas!

I wouldn't because if the squash was frozen then cooked I would not risk reheating it after 3 days...
