It's been a ridiculously tiring day & I fancied something super easy but properly yummy for dinner.
So I heated a bit of oil on a baking tray for 10 mins (like you do for roast potatoes) then put some oven chips on. Turned every 10 mins or so for 30 mins then doused in salt, pepper, Nando's salt & vinegar. Grated a bit of cheddar on top.
Towards the end, I melted some butter & cooked a few garlic cloves for a minute or so. I then added frozen sweetcorn with a tbsp of water, plus paprika/ salt/ pepper & sautéed for 5ish mins. Couldn't find any peas which would have made more sense on paper, but it was honestly the best sweetcorn I've ever eaten in my life 
They were paired with Aldi's fancy chicken Kiev (wild garlic etc) & honey sriracha sauce. It was sublime!! All vv unhealthy I know but cheaper than a takeaway & loads yummier than the ones round here
