You could get the train to York and go to the Railway museum there? (Or just drive there)

or go on the East Lancashire Railway from Bury?

Chester Zoo?

Poppywood Alpacas (in Bolton) is a great day out, we took DD for her last birthday and we all had a fab time!

What about Lego Land at the Trafford centre? I've never been though, so can't say if its any good

There's Croccy Trail in Chester - again, I've never been, but I've heard great things about it

Ice Cream Farm is worth the drive!

Diggerland in Yorkshire - my best friend took her little boy there and they loved it

The British Commercial Vehicle museum in Leyland - although you'd have to check their Christmas opening hours as I couldn't see it on their website.
Also looked at the Manchester Transport Museum although sadly (for you) that does appear to be closed between Christmas and New Year.
