Cake fail

There’s a kid in my DC’s class who is allergic to eggs. Obviously we try not to poison him every time our DC have a birthday but bloody hell; this is the worst cake I have ever made in my life. If I hadn’t been responsible for this monstrosity, I would have assumed that the Milka cow came and took a massive chocolate shit on my kitchen counter.

I used egg replacement in a BBC chocolate sponge recipe. Yes I did add baking powder. What the actual hell went wrong here? Is egg replacement the work of a multinational fraudster or did I just screw this up? How do you make egg-free cakes??? Arghh

If you've got the time/ingredients to make another one you need a vegan recipe - Vegan chocolate cake

Or if you have an Asian area near you they will have an eggless cake shop somewhere if you have time to buy one.

No the DC mums at our school didn't want their DC to die from their allergies so made damn sure they made or bought specific foods and the child was very very aware of what not to eat

It's about the 100% absolute safety of your allergic DC

And should not be grateful that someone has made an effort. That parent needs to be vigilant

So you're suggesting that for every single kid in the class the parent of the kid with allergies should make a cake for them? So 30 cakes a year?! I'm sure if the child has a severe enough allergy that their kid could die from it they wouldn't be letting their child eat cake , or anything in fact, that they haven't vetted. But , speaking as a parent of a child with an allergy which isn't life threatening, I would be grateful someone made the effort to include my child.

Probably too late now, but I'd do this:

*Cut a circle from the centre leaving an outside ring of cake.
*Even up the ring and the circle
*Fill the centre with sweets
*Put the circle 'lid' on top of the sweets and frost to buggery

It'd give it height and hey, surprise lollies. I've salvaged many a cake over the years 😆

I smothered it to buggery with chocolate frosting and decorated it with smarties. The little monsters devoured it and obliterated all remaining evidence of the cow pat disaster 😁. Next time I will follow your advice and will make a vegan cake.

Easiest vegan cake ever - box of Betty Crocker mix and a can of fizzy drink. Works like a charm! (Clearly also deeply unhealthy but if you can't bake for shit then it will do!)

I'm intrigued by thus, I might give it a go.

But quick question - the can of fizzy drink, can it be any fizzy drink, like coke, lemonade etc?

Ive always tried to kind of 'match' it to the flavour, so sprite in a vanilla mix and coke in a chocolate mix.. but as far I know it should work with any!
