Just to update you all, I don’t eat beef so I have no clue when it looks bad. My mum said it smelt bad so will definitely not be cooking! The sell by date was today, gutted!

If it’s not lasting as long as it should, it’s a good reason to check the temperature of your fridge OP.

Good point about fridge temp. I remember being perplexed about my milk going sour before the use by date - it was an issue with the fridge (and had to get a new one, actually).

Just a tip for anyone - if you have beef that isn’t being eaten the same day ALWAYS unwrap it and salt it and leave it uncovered in the fridge until it’s needed.

1 it won’t sit in its juices and get all slimy and gross, and 2 it will be seasoned perfectly as the salt draws out some moisture (almost like a home version of dry aging)

You can leave salted uncovered steak in the fridge for ages! Also if you want to go one further have a look at buying some koji granules for beef that will blow your mind.

Or get it from a good butcher who can vacuum pack it - mine hasn't oxidised at all. Got a good bit of extra fat in with it too.
