Coeliac & vegan friendly pudding ideas, preferably Christmassy

We will be hosting a family group late next week which includes 2 coeliacs and 1 vegan amongst a number of other people. I will be doing the family trifle recipe for one of the puddings and so only really want to make one other pudding. I also want it to be something special. Previously, I've done fruit salads and crumbles but it seems a bit dull to repeat that and they're not quite what I'm after. I'm definitely after recipe ideas rather than suggestions for things to pick up in the supernarket as homemade is the done thing (and, yes, I know this puts pressure on the person hosting and it's not as if I've had any choice really in even hosting it but it will be lovely to see everyone and DH and the DC will help with all the prep. It's just ideas I need).
In case it makes a difference, one of the coeliac's can't stand pineapple.

As a coeliac I am always really disappointed when cold fruit salad is offered for pudding but I really like fruit based cooked puddings. So I'd choose grilled pineapple, poached pears, baked peaches or similar if I had the choice.

I've made something like this winter fruit salad before. I've added some red wine and spices so it's like mulled wine. Serve at room temperature with vegan ice cream or cream. Maybe crush a few gluten free vegan biscuits on top for texture.

I make this gf with sr flour and I use rice milk. I don’t add the cinnamon but have been known to hazelnut meal which makes it divine. Using sr flour means I don’t add the bicarb.

It may need baking at a little lower temp for a little longer than the recipe calls for. It depends in your flour.

Pears poached with cinnammon and vanilla pods, served with fresh cream for the coeliac and alpro cream for the vegan would be lovely.
