What do you do with beetroot?

I've never had fresh/raw beetroot and I think I'd like it.
What's the best thing to do with it and will it stain my kitchen?

May I suggest what NOT to do with it??

Beetroot risotto. Just don't make that. Just no. Voice of experience...anything else just not that.

I love beetroot. It's one of my favourite foods.

I love beetroot soup. I love it in a salad with carrot, parsnip, sweet potato, feta cheese and grated ginger.

I had it in a goat’s cheese tart in a restaurant the other night. It was delicious.

I love all the beetroot however in the early spring, when I also have fresh carrots coming out of the garden, I grate them both up, and put into a big jam jar covered with apple cider vinegar and this stays ok for ages. So I can just take out forkfulls to put on the sides of dishes for weeks. And only one big prep session.
