Casual easy Sunday lunch that not a roast?

What’s yours?

I usually bung a chicken in the air fryer but don’t feel like it today. I need to go to the supermarket shortly anyway so can pick anything up, but my mind is blank!

We have one vegetarian, and 4 meat eaters who are equally happy to not eat meat….

A nice salad - a cooked ham joint, boiled eggs (or scotch eggs), a bit of brie, tubs of potato salad, radishes, tomatoes.

(not mine today but something I quite fancy right now!)

Lasagna, salad, garlic bread etc. I often still roast the chicken and have it cold. Or I like making chorizo and sausage rolls and have with potato salad etc.

Ooh a big salad thing like my DF used to make! Lots of salad, some chicken, ham, cheese, eggs, french bread, crisps or chips, coleslaw, quiche and a cheesecake!

I like the summer style food that could go on a bbq but equally nice in the oven or grilled- the meat/veg kebabs, marinated steak, halloumi, med veg, burgers etc with salads and lovely bread.

Mezze/tapas is always my go-to. Waitrose have lovely tins of aubergine and butter beans in Middle Eastern type dressings, then I get a frittata or spanakopita, salads etc. Depending how hungry, I fry off chorizo, throw in the tin of dressed butter beans and some prawns and cook through- takes minutes. Or slow roast chicken thighs with garlic and herbs/spices. And loads of lovely flat bread to mop it all up.

I make a salad based on pre cooked beans (chickpeas, black eyed beans etc) then add any random raw bits, dressing. Everyone chooses their own protein.

At this time of year you could have asparagus with new potatoes, cold meat or cold, poached salmon, a further vegetable or salad and strawberries and cream for pudding.

Home made or jar tomato sauce, mixed with cooked gnocchi (2 mins on hob, bung veg like green beans or broccoli in for a few mins first) then tip in an oven dish and top with cheese and bread crumbs and bake for 10/15 till cheese is lovely and bubbling
