Not really a recipe per se but Lidl does a korma paste which is really nice, I just make a potato, spinach, chickpea curry with it and some nice thick coconut milk. Delicious!

Cauliflower/potato/sweet potato
Heat oven
Heat some oil in a roasting pan till hot
Remove and add a teaspoon of any curry paste ans some mango chutney
Add veg and stir to cover with the sauce. Season.
Roast, turning once or twice.

In a pan add rest of curry paste, spoonfull mango chutney, chopped toms or passata, coconut milk
Simmer until it thickens
Remove veg from oven when cooked and cover with sauce.

This is basically a Jamie oliver curry. Brilliant for leftover veg, dirt cheap, vegan and kids love it. Really easy to cook.

This is my all-time favourite vegetarian curry to make - as you can tell from the amount of splatter on the page! - and it also happens to be chickpea-based. It's from Madhur Jaffrey. I'm making it tonight along with some spicy fried courgettes and a huge bowl of raita.

I'm interested in this too. I attempt to make vegetable curries quite often, but they tend to disappoint.

Love this one - carnivorous DH eats without asking where the meat is 😆
