Anyone having a healthy coronation afternoon tea?

Thinking of getting on the bandwagon and having afternoon tea of sorts on Saturday, BUT I don't eat carbs/sugars for blood glucose reasons. And we are on a proper health kick at the moment.

Any ideas what we could have?

We eat low carb too. I would have crustless quiche, mini sausages, chicken wings or drumsticks, smoked salmon and cream cheese pinwheels, scotch eggs, crudités and dips. Maybe a charcuterie / antipasto platter and a cheese board too.

I need to look up a recipe, I've never made it. I've had it at a friend's goose and it's delicious so I definitely want to make some.

@OP, one of the things I’m doing is serving coronation chicken on mini gem lettuce leafs for those who’d prefer not to have many carbs.

I’m also doing the quiche. I saw it being baked on YouTube by someone and it looked very nice. Far better than the original video of it being made.

Agree with crustless quiche (of any sort, doesn't need to be the weird coronation one), scotch eggs and baked sliced ham with piccalelli, deviled eggs, crudites with hummus/dips, coronation chicken (could make with non-sugar sweetener) on low carb crackers or in lettuce wraps, and then I'd do a fruit salad plus strawberries and cream for pudding (you could use artificial sweetener in the cream as well).

A bit like a Swiss roll, just spread cream cheese on smoked salmon, roll up and then cut into slices. Serve with lemon wedges and a sprinkling of chopped chives if you want them to look fancy!

You could do a fruit platter laid out in the shape of a union jack. Blueberries for the blue, strawberries or raspberries for the red and white-fleshed melon balls for the white (or white raspberries if you can find them)

Definitely agree with crustless quiche and coronation chicken in lettuce wraps.

Is natural sugar ok? I saw a cute idea where someone had made a Union Jack out of strawberries, raspberries and blueberries on a white platter.

I'm T2 diabetic and am trying to watch blood sugars. I'm planning a real treat of a nice cheese board (usually reserved for Christmas) with celery, grapes and cucumber slices, some really nice salad leaves topped with oven roasted veg, and a baseless cheesecake which is cream cheese, whipping cream, vanilla paste all whipped and then berries added.

It sounds delicious Slim. I’m going to give Jamie’s version of the chicken a go. We love the original recipe but this one is worth a try. And I had a look at the video of him making it, he serves it on a bed of the gem lettuce so we’re in good company.
