Coronation bring and share

Hit me with your suggestions for dishes for a 'bring and share' Coronation event next Sunday. There will be about 20 people, a mix of ages including children. Each family has been asked to contribute a couple of dishes. I've been assigned a veggie main/protein dish and a carb based salad. (Organiser is a bit of a micro manager hence the specific criteria!) I'm fairly confident in the kitchen so prepared to do anything but just can't decide! I'm tempted to make a quiche as I think it's a fairly basic crowd pleaser but personally I hate quiche. Not that that matters. I really want to make a coronation chickpea dish but I'm not sure.
Carb based salad I'm thinking either a Moroccan cous cous and roasted veg salad with lots of fresh herbs and pomegranate seeds to make it look pretty. Or a sweet potato salad with a sort of vinaigrette dressing.
Any opinions or suggestions?

Making veggie dishes here too - as a quiche alternative I was going to make a tomato galette like this one https://www.bbcgoodfood.com/recipes/tomato-galette/amp but also adding feta and black olives (might attempt a Union Jack formation with them!) - I suppose it could also be made rectangular to serve more people? Also making coronation aubergine lettuce cups, which I guess could work with chickpeas too, something like this https://agfl.com.au/coronation-chickpea-salad/. Cous cous salad with roasted vegetables and herbs sounds delicious!
