So I've just been googling Jollof rice (again!) But I'd really like to hear from someone who cooks it for their family as a norm.

Hoping to set up a thread - share one, ask for one!

So my share...

Pork Porkolt. Was taught how to cook this by my Hungarian Nan - very simple, but potatoes, not the noodle dumplings as often seen.

Also recipes rough and ready - no weighing!

So... To feed 4-6 I'm thinking...

Diced pork, cut of choice, not too fatty.
Onions x 2, finely chopped.
Paprika - probably a tablespoon (or more of)
Potatoes.
Lard or oil.
Stock or water.

Heat lard, add half onions, stir and whilst they are softening add half the paprika. Add some water and cook down. Add rest of onions and paprika and cook down again. This makes sure you get the base flavour. Add the diced pork and stir until infused with onions and paprika. Add a little more water.
Keep cooking down until you have pork in just a little amount of sauce.

Potatoes should be cut into quarters and boiled. Place potatoes around edge of bowl like very thick uncooked chips. Pour Porkolt into centre of bowl and serve.

Season with pepper and salt as required.

So as above I'd like a really simple Jollof rice recipe, I'd also like a lovely creamy coleslaw recipe...

You can search on YouTube or Google for one.
I'll share what I usually do.
2 tins of plum tomatoes, 3 big bell peppers, 1 scotch bonnet, 2 medium onions. Blend then pour in 2 cooking spoons of oil. Simmer for 15mins. Season with stock, thyme, curry, white and black pepper. Rinse rice 3 times.
Pour in pot making sure the liquid covers it with about an inch or less of sauce on top.
Once boiled, leave on lowest heat to simmer. Stir 3ce.
