Favourite vegetarian dinners

If you have small children what are your favourite veggie family meals?
Some of my favourites they won’t eat.

Pasta/Tom sauce/cheese

Cheese flan & beans

Also, shepherds pie made with lentils instead of lamb (Jamie Oliver has a good recipe)

Home made pizzas with salad
Veggie lasagna
Fajitas
cauliflower and macaroni cheese
”bits” - a sort of snacky plate with salad bits, cut up fruit, cheese and nice bread

We aren’t veggie but my DS(6) is. He loves a baked potato smothered with cheese, with a quorn fillet and cucumber. Or quorn Swedish style meatballs with pasta.

Also a big fan of a cheesy omelette!

There’s a recipe for yasai yakisoba on the mob kitchen website which is a favourite here. I also like to make a veggie (it might even be vegan) cauliflower biryani from the Gousto website. Then your veggie chilli/cottage pie replacing mince for lentils and/or beans. Also like
to make a lot of soups - potato and leek or we also like the ‘magic soup’ from the Tesco recipe served with cheese on toast. Quorn nuggets served in wraps with salad also goes down well here.

Not vegetarian but I’m not a huge meat lover and like to have veggie meals 3/4 times a week.

Shakshuka. Mine has plenty of chilli in, but you could tone it right down. A spicy sauce made with onions, peppers, and tinned tomatoes, then crack in the eggs (make small wells in the sauce), put the lid on or pop in the oven until set. Serve with crusty bread for dipping. I sometimes put cheese on top as well, feta is nice or just regular cheddar.

Also forgot to add DIY pizzas, we buy the frozen dough from Tesco (I think it’s by Northern Dough Company and you get enough for 2 pizzas but you could always make your own dough or buy a plain base) make a tomato sauce and then prepare various toppings eg cheddar, mozzarella, red onion, peppers, sweet corn and let DC go max making their own.

We do this. They love to make their own and choose their own toppings.

Our other favourites are fajitas, quorn bolognaise, veggie shepherds pie and chili so that is a good variety.

They are not that keen of things like lentils and chickpeas.

A little bit disappointed it’s not that, and just about dinner.
