ok my adult dd is severely disabled. one of the things she loves and can eat with no problems is cheesy pasta, (not macaroni cheese) just pasta in a sauce. I like to batch cook it. any tips for the sauce. I have been using the bisto cheese sauce, but it has a weird after taste( yes I add more cheese.)
?? it doesn't need added veg or stuff but the higher the cals the better.

If you Google BBC food has a good cheese sauce recipe. Add extra cheese for more calories. It’s going to be better and higher in calories than bisto.

omg duh. I for some reason didn't think of just looking for sauce......old lady brain

I have a good one that freezes well (doesn't do too well in fridge, funnily enough). I think it was an Annabel Karmel one from years ago, but I'm still using it.
20g butter melted, add 2 tbsp plain flour, add a little of 175ml milk and make into a paste, add rest of milk and stir until bubbling. Add 65g grated cheddar and to season a pinch of ground nutmeg and stir on a low heat until cheese has melted. That's it, it's very simple.

I do a microwave one and it's so easy. 50g plain flour, 50g butter, 600ml milk. Microwave the lots in 1 min bursts, whisking after each. When the right consistency (5 or 6 mins in micro) add a shit tonne of extra mature cheese and a blob of mustard. Got to be super cheesy for me!

I also find that cheese sauce goes odd in the fridge very quickly, but freezes well. Just needs a good stir when reheated.

Use whole milk instead of semi skimmed for extra calories.

Thank you for all the ideas

Am loving this. I think it should be adopted as an official measurement
