Lamb shanks

What can I do with lamb shanks ? I want to put them in the pressure cooker. I don't want to use anything that has red wine or mint sauce.

I have never had them before so no idea what they are like.

Use Moroccan spices.
Serve with couscous , roast veg.

They cook like little lamb legs if you flow cook them. Really delicious.

I pressure cook them. Fry off some onions and garlic, and some very finely chopped carrot. Brown the lamb shanks. Add them to the pot with some stock, a bay leaf, some sage (or any herbs you fancy really) a little tomato purée and something for some extra umami, Worcester sauce/Guinness paste/miso/MSG, anything like that. Pressure cook for 1/2 hours (I like them incredibly tender). Take the lamb out, thicken the stock/sauce and serve with whatever you fancy

Tomatos , onions lentils, anchovies and herbs de Provence work well

Probably a silly question. I'm still learning with pressure cooker 😅 if I cooker say 4 lamb shanks would they need to be cooker longer than 2 lamb shanks ?

Same amount of time is fine, unless they’re really crowded in the pot
