Inspire me with birthday ideas in South East England!

DH is 40 this summer and I'd love to plan something a bit different for him for his birthday. Please share anything a bit different that you've done (for a birthday or not!)in SE England to give me inspiration!

We've done wine tasting, spa and glamping before and enjoyed them all but I'm looking for something a bit unusual perhaps. Or a really quirky hotel perhaps?

Budget is about £500 which would ideally cover a meal and hotel as well (might be wishful thinking...)

Thees a gin distillery in Maidstone, any bands on at Dreamland in Margate he might like? A microbrewery pub crawl...I have friends that go off and do this.

Stay at rewilding place Knepp, West Sussex. Amazing experience. You can stay in a tree house with a wood-fired hot tub. Definitely unique.

Watching with interest, as we're also looking for a 'different' weekend away. So far, my research has discovered:

Thanks for the ideas - we're actually doing something similar to the rewilding project for my birthday bit it does look amazing so I will keep it in mind!

Lots of things to do at Goodwood - racing of course, but also the festival of speed, test flight etc. If you stay at the hotel, I recommend eating at Farmer, Butcher, Chef. If you have nice weather, you could go to the beach at West Wittering the next day.
The early bird tickets for the festival of speed need to be booked soon.

Otherwise, The Pig hotels have the Smoked and Uncut festival.

Gor my 40th i went on the i360 brighton. Loads of nice hotels, Hotel Pelirocco is quirky and good reviews I believe.
