Just a couple of friends coming round for drinks. We usually have cheese board etc but I fancy cooking a meal this time. Something I can mostly prep ahead of time.

I’m no help, I always get a takeaway ordered when I have friends round 😂 I’m not a cook, I hate cooking (don’t mind baking but actual real food? No thanks!).
If I was going round to a friends though for drinks I’d probably like some homemade sausage rolls and other freezer to oven party food so still no help as you are actually cooking!

Something quick but also a bit special, my go to is always linguine with chilli, garlic, cherry tomatoes, parsley and crab. With a few toasted garlic bread crumbs sprinkled on top.

If you want an actual meal rather than a cheese board or mezze type thing then something that just goes in a bowl and can be eaten with one utensil is probably best. So like posh Mac and cheese, burrito bowl, poke bowl, nice pasta like salmon and leek or puttanesca, cassoulet, tagine.

My suggestions are based on you saying this was “drinks”, so people might be standing in the kitchen or sitting on a couch rather than sat at a dining table. But if you’re at the table then anything goes really!

Some kind of chicken traybake. I did one the other day with chicken, cumin, paprika, garlic, bacon, salami and cherry tomatoes. It went really well with spicy vegetable rice, which can be pre-cooked and microwaved.
Fajitas. I like “assemble yourself” food.
Nachos and salad, with home-made chilli, guacamole, soured cream, covered in cheese and baked
Toad in the hole with mash, peas and onion gravy
Curry and variety of sides

If i was a guest I'd be happy with crisps and dips - it's all about the wine for me! But if we had to have food, my preference would be a beige buffet all the way 😋
