Christmas 2022 Leftovers

Confession time. Who has food leftover from Xmas & how are you using it.

We had quite a small Christmas food wise and I definitely didn’t over buy but still ended up with a pack of smoked salmon and some fresh pasta which I froze. Leftover Turkey & veg was soupified - final portion eaten last week.

Attempting a frugal March so eating through random freezer food - pasta got turned into a carbonara earlier.

So just the salmon to go. Recipe suggestions for proper meals to make with it welcome.

We have. I've still got a bag of cooked chopped turkey, half the garnish pack and a mini bread and butter pudding in the freezer. Also got the Turkey wings and drumsticks as I only cooked the boned crown on Xmas Day.

I'll use it all up eventually.

Defrost your pack of smoked salmon and have a nice Sunday breakfast - have it scrambled eggs or do it with muffins and poached eggs.

3 boxes of chocolates
1 box of shortbread
Half a jar of pickled red cabbage
Almost full jar of Piccalilli
1 roll of ready made puff pastry (frozen)
A couple of packets of Kettle Chips.

Not too bad. Chocolate and shortbread were gifts that will probably get eaten sooner or later, if not I'll donate them to somewhere or put them in the staff room at work.

If I got the crisps out they would be gone pretty quickly once people knew they were there.

The pickles will be down to me. They're ok but not my favourites, but at least they are quite colourful cupboard ornaments!

Smoked salmon with pasta, cream cheese, lemon juice, parsley and chilli.

Smoked salmon pasta. Cool salmon with vodka (flame off alcohol), chilli, bit of tomato purée and some cream. Very easy and delicious.

Uh none. I don't have that big a fridge or freezer and didn't overbuy so it was all eaten.
One year though (years ago in a much bigger house) we were entertaining a lot so my husband bought a mini fridge he put in the dining room and put all the Christmas cheese in there. We totally forgot about it then months later...🤢

We've still got some pigs in blankets and bread sauce (frozen) I'll probably add it to a roast at some point. There's a few chocolate bits - hoping they're be gone by Easter (!)

We were away for Christmas so no leftovers.
But for salmon, how about adding it to egg fried rice with some veg?

I had some supermarket brandy butter hanging around in the fridge so I made brandy flapjacks at the weekend.

Still got some of the Christmas cake to go - need to finish that off before I make a simnel cake 🤦🏼‍♀️

Big tub of dry roasted peanuts
Jar of olives from my mum that are very fancy but huge pips and a pita to actually eat / use
