Made Dahl for the first time this week, and wondering what other delights I can manage

Carrot and lentil soup.

3 or 4 medium carrots, peeled and roughly chopped
1 medium onion, roughly chopped
200g or so red lentils
about 750ml stock or water for a thick soup, more if you like it thinner

Fry the onion and carrot gently for about 5 minutes. Add the lentils and stock/water, bring to the boil, then simmer for about 15 minutes. The lentils should be done and the carrots quite soft.

Blend smooth.

Add salt to taste.

Sometimes I add in other veg, sometimes some spices at the beginning (curry powder, garam masala, cumin seeds, lightly crushed coriander seeds, whatever I feel like really)

My go-to when I want something quick, healthy, cheap and tasty

I do a very good (even if I say so myself) lentil loaf and lentil shepherd's pie. I'm not at home just now bit can photograph the recipes this evening if they're of interest.
Also, I know you've already done dahl but this recipe is delicious.

Lentil and bacon soup. There’s no real recipe,, just a bundle of ingredients-

Leek (softened)
A few rashers of bacon
Lentils
Ham stock cube

Goes down a treat in my house

You can also do spicy lentil:

Lentils
onions
chopped tomatoes
veg stock
chilli powder
any other veg you might like to add - carrots, peppers, whatever you have in

Lentil macaroni (I made it up)

Fry a couple of sticks of celery chopped up and a couple of cloves of garlic chopped small.
Rinse a cup of red lentils in a sieve then add to the saucepan. Stir to coat in oil.
Add 1 pint of vegetable stock and a tin of tomatoes bring to the boil
Simmer for 30mins
add a cup of macaroni
Bring to the boil and then simmer for 15 mins.
Put in a casserole dish and grate cheese on top
put under the grill until the cheese melts and is bubbling.

You can add in more veg if you want.

Cheese and Lentil loaf. It is absolutely scrummy.

I have the book and it naturally falls open on this page.

ShillyShallySherbet · 02/03/2023 12:58

forgot you say you might need to add more water to the pan if it starts to get too thick.

Ragwort · 02/03/2023 13:00

That looks delicious Brefugee - I make a nice lentil and mushroom lasagne, no real recipe but make a sort of 'ragu sauce' with lentils and mushrooms plus any other suitable veg you have that needs using up and layer in the usual way with lasagne sheets and white or cheese sauce.

Brefugee · 02/03/2023 13:11

I am not joking, it is lush. Hot, with boiled potatoes and a green veg, maybe with a bit of sauce (tomato is good, or some kind of yoghurt thing)

Cold with a bit of salad etc. Just. ... Now i know what I'm eating on Saturday!

I make a great soup with onion, garlic, gently fried cooking chorizo (chopped into small dice), red lentils, tinned tomatoes, vegetable stock, bayleaves, basil. Blend when done and serve with a spoonful of creme fraiche or cream swirled through. We call it Spanish soup in this house.

Love the look of that cheese and lentil loaf!

BBC Good Food’s lentil and sausage simmer is delicious!

Lentils rock! I am definitely giving that cheese and lentil loaf a try!
