How much veg?

Not really any particular reason but I'm about to start cooking and curious!

Making a pasta bake to freeze, 5-6 portions with meatballs and veg in it
How much would you use of each veg?
Courgette
Onion
Cherry tomatoes
Peppers

Tomatoes... depends on whether you used tinned tomatoes as the sauce base

I would chuck peas in too

4 peppers

1 or 2 courgettes depending on size, our local farm shop has huge ones at the moment, 2 peppers, 1 red onion, tomatoes would depend if you're also using tinned tomatoes.
I'd also put in mushrooms and sometimes sweetcorn too (I'm not a fan but DS loves it)

Made me chuckle.

For 6 portions of pasta bake with veg I’d use 2 courgettes, 2 peppers, 1 or 2 onions, depending on their size. No cherry tomatoes unless it’s a tomato-less sauce.

I usually reckon on one piece of veg per person. I'd probably do
2 or 3 courgettes
2 or 3 peppers
1 large onion
(I'd probably chuck in an aubergine too instead of a courgette/pepper)

I wouldn't waste cherry tomatoes to freeze, they're far nicer straight out the packet! I'd use 2-3 tins of tomatoes.
